Ingredients
  

  • 1 1/2 lbs g carrots, peeled and julienned
  • 1/4 cup finely chopped scallions
  • 2 tbsp chopped fresh cilantro
  • 2 tbsp chopped fresh basil
  • 1 1/2 tbsp toasted sesame seeds
  • 3 tbsp rice vinegar
  • 2 tbsp sesame oil
  • 1 1/2 tbsp low sodium Tamari (or soy sauce)
  • 1 tbsp mild white miso
  • 1 tsp sriracha
  • 1 tsp coconut sugar
  • 1 tsp finely minced fresh garlic
  • 1 tsp grated fresh ginger

Instructions
 

  • Toast sesame seeds in a small pan over medium heat for 5-7 minutes until golden and fragrant, then remove from heat.
  • Wash, peel, and julienne the carrots, then place them in a large mixing bowl.
  • Add chopped scallions, cilantro, and basil to the carrots and mix well.
  • Blend dressing ingredients in a blender or food processor until smooth, or whisk until smooth if using a bowl.
  • Pour the dressing over the carrot mixture and toss to coat thoroughly.
  • Chill the salad in the refrigerator for at least one hour before serving to enhance flavors.

Notes

Use fresh ingredients for the best flavor. Allow the salad to chill before serving to enhance taste. Toasting sesame seeds adds a nutty flavor. Adjust dressing ingredients to suit personal taste preferences. The salad can be prepared in advance and stored in the fridge.
