Ingredients
  

  • 36 Oreos, crushed
  • 1/2 cup butter, melted
  • 1 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 2 8 oz tubs Cool Whip, thawed
  • 3 cups milk
  • 3 3.4 oz boxes cheesecake instant pudding mix
  • 1 tsp mint extract
  • Green gel food coloring

Instructions
 

  • Preheat the oven to 375°F and prepare a 9 x 13-inch baking dish with non-stick spray.
  • Crush the Oreos in a food processor, mix with melted butter, and press into the bottom of the pan.
  • Bake the crust for 8 minutes and allow it to cool.
  • Blend cream cheese, powdered sugar, and one tub of Cool Whip until smooth, then spread over the cooled crust.
  • Whisk milk and pudding mix, fold in remaining Cool Whip and mint extract, add food coloring, and spread over the cream cheese layer.
  • Optionally, sprinkle additional crushed Oreos on top.

Notes

For a more intense mint flavor, increase the amount of mint extract. The dessert can be made ahead of time and stored in the refrigerator.
