Ingredients
  

  • 2 cups granulated sugar
  • 4 oz. unsalted butter
  • cup melted vanilla ice cream
  • 1 cup Ghirardelli Green Chips
  • 1 cup white chocolate chips
  • 7 ounce jar marshmallow crème
  • Shamrock sprinkles optional

Instructions
 

  • Combine sugar, butter, and melted vanilla ice cream in a saucepan and heat until boiling. Reduce heat and cook for 7-10 minutes until it reaches 234°F.
  • Remove from heat and stir in white chocolate chips and green mint chips until melted and smooth.
  • Mix in the marshmallow crème until fully combined.
  • Pour the mixture into a prepared pan and add sprinkles if desired. Allow to cool before cutting into pieces.

Notes

Use a digital candy thermometer for accuracy. Baker's sugar is recommended for a smoother texture; blend regular sugar if unavailable. High-quality butter and chocolate prevent separation, and the fudge may brown slightly during cooking due to the sugar in the ice cream.
