Ingredients
  

  • 1 pound ground hot Italian sausage
  • 3 carrots, peeled and diced
  • 1 large white onion, diced
  • 1 tablespoon minced garlic
  • 4 cups chicken stock
  • 29 ounces diced tomatoes (from two 14.5 ounce cans)
  • 16 ounces cheese tortellini
  • 1 cup heavy cream
  • Parmesan cheese (for serving)
  • Kosher salt (to taste)

Instructions
 

  • Cook the ground sausage in a large pot over medium-high heat until crispy, then drain on paper towels.
  • Sauté the carrots and onion with a pinch of salt, deglazing with chicken stock, until softened, then add garlic and cook until fragrant.
  • Add the remaining chicken stock and diced tomatoes, season, and bring to a boil.
  • Stir in the tortellini and cooked sausage, cooking until the tortellini are tender.
  • Remove from heat and mix in the heavy cream before serving.

Notes

The soup can be stored for up to two days before the tortellini becomes too soft. For freezing, omit the tortellini and cream initially, cool the soup and freeze. When ready to serve, thaw, reheat to a boil, add the tortellini, and cook until tender before stirring in the cream. Alternatively, cook the tortellini separately and serve the hot soup over it to prevent sogginess.
