Ingredients
  

  • ½ cup salted butter
  • 15 ounces mini marshmallows reserve 1 cup
  • 1 teaspoon pure vanilla extract
  • 9 cups Rice Krispies cereal
  • Pinch of salt if using unsalted butter

Instructions
 

  • Grease or line a 9x13 baking dish with parchment paper. Melt the butter in a large saucepan over low heat.
  • Add 15 ounces of mini marshmallows (keeping 1 cup aside) and stir until fully melted, then remove from heat.
  • Mix in the vanilla extract and a pinch of salt if using unsalted butter.
  • Gently fold in the Rice Krispies cereal and the reserved marshmallows until evenly coated.
  • Transfer the mixture to the prepared baking dish and press down lightly with a buttered spatula or wax paper.
  • Allow the treats to cool at room temperature for about an hour before cutting into squares.

Notes

Use fresh ingredients for best results; stale marshmallows or cereal can lead to hard treats. When pressing the mixture into the pan, do so gently to avoid dense treats. For added texture, consider mixing in whole marshmallows with the cereal.
