Ingredients
  

  • 1 package red velvet cake mix (plus ingredients listed on the box)
  • 1 cup cream cheese frosting (approximately 8 ounces)
  • 2 ounces softened cream cheese
  • 2 packages (10 ounces each) white melting chocolate
  • Sprinkles (optional)

Instructions
 

  • Bake the red velvet cake mix in a 9×13 inch pan according to package instructions and let it cool completely.
  • Crumble the cooled cake into small pieces in a large bowl.
  • Microwave the frosting for 15 seconds to soften, then mix it with the cream cheese and crumbled cake using an electric mixer until well combined.
  • If the mixture is dry, add more frosting until it is moist when squeezed.
  • Form balls using a small cookie scoop and freeze them for 30 minutes.
  • Melt the white chocolate until smooth, then dip each cake ball into the chocolate, scraping off excess.
  • Optionally add sprinkles and place the coated truffles on a lined baking sheet to refrigerate until the chocolate hardens.

Notes

For cake pops, insert lollipop sticks into the truffle balls. You can use different cake flavors, frostings, and chocolate coatings for variety. Avoid freezing the truffles completely to prevent cracking of the chocolate coating. Use a fork to remove excess chocolate when dipping to maintain a smooth finish.
