Ingredients
  

  • 1 cup Chocolate cookie crumbs
  • 4 tablespoons Unsalted butter melted
  • 8 ounces Cream cheese full-fat brick style
  • 1 cup Powdered sugar sifted
  • 1/2 cup Heavy cream
  • 1 teaspoon Vanilla extract pure
  • 2 tablespoons Unsweetened cocoa powder Dutch-process
  • 1 teaspoon Red gel food coloring
  • 1 cup White chocolate chips or white melting wafers
  • 1 teaspoon Coconut oil optional
  • Red velvet cake crumbs, cocoa powder, or sprinkles optional for garnish

Instructions
 

  • Mix chocolate cookie crumbs and melted butter until it resembles wet sand, then press into a mini muffin pan and refrigerate.
  • Beat cream cheese until smooth, then mix in powdered sugar, heavy cream, vanilla extract, cocoa powder, and red gel food coloring until velvety.
  • Spoon or pipe the filling onto each crust and freeze for at least two hours.
  • Melt white chocolate chips with coconut oil, dip each bite, and sprinkle with garnishes before refrigerating until set.

Notes

Store finished cheesecake bites in an airtight container in the refrigerator for up to five days or freeze for a month. For gluten-free options, use gluten-free cookie crumbs, and for dairy-free, substitute with plant-based cream cheese and butter.
