Ingredients
  

  • 3 cups old fashioned rolled oats or quick oats
  • 1 ¼ cups creamy peanut butter, almond butter, or sunflower seed butter
  • ¾ cups maple syrup or honey
  • ½ cups mini chocolate chips

Instructions
 

  • Combine oats, peanut butter, maple syrup, and chocolate chips in a large bowl and stir until mixed. Chill the mixture in the refrigerator for 30 minutes.
  • Form the chilled mixture into 1 tablespoon-sized balls and place them on a baking sheet. Store in the refrigerator or freezer until ready to eat.

Notes

You can substitute peanut butter with other nut butters or tahini. If the mixture is too crumbly, add more peanut butter. Refrigerating the mixture for 10 minutes before rolling helps with texture. Keep energy balls in the fridge or freezer to maintain firmness.
