Ingredients
  

  • 1 cup orzo whole-wheat optional
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 small onion finely chopped
  • 2 cups mushrooms button, cremini, or baby bella
  • 4 cups fresh spinach roughly chopped
  • 2 cups vegetable broth
  • ½ cup heavy cream optional; coconut cream for dairy-free
  • ½ cup grated Parmesan cheese optional
  • Salt and pepper to taste
  • Fresh herbs thyme or parsley for garnish

Instructions
 

  • Cook the orzo in salted boiling water for 8–10 minutes until al dente, then drain and set aside.
  • In a large skillet, heat olive oil over medium heat, sauté onion for 2–3 minutes, then add garlic and cook for 1 minute.
  • Add mushrooms to the skillet and sauté until golden brown and moisture is released, about 5–7 minutes.
  • Stir in spinach and cook for 1–2 minutes until wilted.
  • Pour in vegetable broth and simmer for 3–4 minutes, then stir in cream if desired.
  • Combine cooked orzo with the mushroom-spinach mixture, adding more broth or cream for consistency, and mix in Parmesan until melted.
  • Adjust seasoning with salt and pepper, garnish with fresh herbs, and serve warm.

Ensure mushrooms are cooked properly to enhance their flavor; avoid adding salt too early. Monitor orzo cooking time to prevent overcooking and adjust the dish's consistency by adding more liquid if it appears dry.
