Ingredients
  

  • 2 pieces Ripe mangoes Use ripe mangoes for optimal flavor.
  • 1 small Red onion
  • 1 medium Cucumber
  • 1 medium Red bell pepper
  • 1 cup Cherry tomatoes
  • 1/4 cup Fresh cilantro leaves
  • 1/4 cup Fresh mint leaves
  • 3 tablespoons Fresh lime juice
  • 1 tablespoon Honey Adjust quantity to modify sweetness.
  • 2 tablespoons Olive oil
  • to taste Salt
  • to taste Black pepper

Instructions
 

  • Peel and slice the mangoes, red onion, cucumber, and red bell pepper, and halve the cherry tomatoes.
  • Whisk together lime juice, honey, olive oil, salt, and black pepper in a small bowl until smooth.
  • In a large bowl, layer the mango, red onion, cucumber, red bell pepper, cherry tomatoes, cilantro, and mint.
  • Pour the dressing over the salad and gently toss to coat.
  • Chill the salad in the refrigerator for at least 15 minutes before serving.
  • Serve chilled as a side dish or light main course.

Notes
