Ingredients
  

  • 1 lb Cavatappi Pasta (or elbow, penne, farfalle)
  • 4 Tablespoons Butter
  • 1/4 cup Flour
  • 1 1/2 cups Whole Milk 2% milk can be used as a substitute.
  • 1 1/2 cups Heavy Cream
  • 8 ounces Sharp Cheddar Cheese (freshly grated) Use freshly grated cheese for best results.
  • 8 ounces American Cheese (Boar's Head from the deli)
  • 4 ounces Medium Cheddar Cheese (freshly grated)
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 1/2 teaspoons Paprika
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Dijon Mustard May use 2 teaspoons for more flavor.

Instructions
 

  • Cook the pasta in salted boiling water until al dente, then drain and set aside.
  • Melt the butter in a large saucepan over medium heat, then whisk in the flour and cook for about 2 minutes.
  • Gradually add the heavy cream and whole milk, whisking continuously until the mixture thickens.
  • Stir in Dijon mustard, paprika, garlic powder, salt, and pepper, adjusting seasoning as needed.
  • Lower heat and add the cheeses gradually, stirring until melted and smooth.
  • Combine the cooked pasta with the cheese sauce, then transfer to a baking dish and top with remaining cheese.
  • Broil for 2-3 minutes or bake at 350°F for 12-15 minutes until the cheese is melted.
  • Serve immediately, optionally garnished with dried parsley or additional paprika.

Notes

To prevent graininess, add cheese at low temperatures and use freshly grated cheese. Ensure to make a roux for a smooth sauce and avoid overheating the cheese. If reheating, add a splash of milk or cream to restore creaminess.
