Ingredients
  

  • ½ cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 ¾ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup whole milk
  • 1 tablespoon confectioner's sugar, for dusting

Instructions
 

  • Preheat the oven to 350°F and grease a 9-inch round cake pan, optionally lining it with parchment paper.
  • Cream together the butter and sugar until fluffy, then add eggs and vanilla, mixing until smooth.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually mix the dry ingredients and milk into the butter mixture, being careful not to overmix.
  • Pour the batter into the prepared pan and bake for 26-32 minutes until a toothpick comes out clean.
  • Cool the cake in the pan, then invert onto a plate and dust with confectioner's sugar before serving.

Notes

Best served with whipped cream and fresh berries. The cake is optimal when consumed the same day but can be stored in a sealed container at room temperature for 2-3 days. It can be frozen for up to two months; thaw at room temperature for 1-2 hours before serving.
