Equipment

  • heavy pot
  • oven-safe saucepan
  • broiler

Ingredients

  • 2 pounds extra lean ground beef
  • 2 green bell peppers, diced
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 2 tablespoons brown sugar
  • 2 teaspoons kosher salt (adjust to taste)
  • 1 teaspoon ground black pepper
  • Cayenne pepper (to taste)
  • 2 cups chicken broth
  • 1 cup ketchup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 cup shredded Cheddar cheese , divided

Instructions

  • In a heavy pot, combine ground beef, bell peppers, onion, garlic, flour, brown sugar, salt, black pepper, and cayenne pepper, then heat over medium-high until crumbly, about 15 minutes.
  • Add chicken broth, ketchup, mustard, and Worcestershire sauce, mix well, and simmer for about 45 minutes until thickened.
  • Preheat the broiler and transfer the mixture to an oven-safe saucepan, topping with half the cheese, then the remaining cheese.
  • Broil until the cheese is browned and the dip is hot and bubbly, about 5 minutes.

Notes

You can replace the chicken broth with 2 cups of water. Alternatively, finish cooking the dip in a hot oven at 425°F (220°C) instead of using the broiler. The dip can be kept warm on the stove at low heat for guests to serve themselves. This dip pairs well with baguette slices.
