  • 1 cup orzo pasta
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 2 cups chicken broth or vegetable broth
  • Zest of 1 lemon
  • Salt and black pepper, to taste
  • ½ cup freshly grated parmesan cheese
  • Optional: fresh parsley or basil

Instructions
 

  • Heat the butter and olive oil in a medium skillet over medium heat, then sauté the minced garlic until fragrant.
  • Add the orzo and toast for 1 to 2 minutes to absorb the butter.
  • Pour in the broth and bring to a gentle simmer, then lower the heat and cook until the orzo is tender and most liquid is absorbed.
  • Mix in the lemon zest and juice, then remove from heat and stir in the parmesan cheese.
  • Season with salt and black pepper, let it rest for a minute, and serve warm.

Notes

Stir the orzo frequently to prevent sticking and maintain a gentle heat to avoid burning the garlic. If the orzo thickens too quickly, add a splash of broth. Zest the lemon before juicing for optimal flavor.
