Preparation

  • In a bowl, mix softened cream cheese with sugar and vanilla until smooth and spreadable.
  • Spread the cream cheese frosting evenly over the cooled cookie crust.
  • Arrange the assorted fresh fruits on top in a decorative pattern.
  • Optionally garnish with mint leaves for color and flavor.
  • Slice and serve chilled or at room temperature.

Notes

Chill the crust completely before spreading to prevent the topping from melting. Use ripe but firm fruit to keep slices looking fresh and avoid sogginess. For cleaner slices, chill the assembled pizza 15–20 minutes before cutting. Store leftovers covered in the refrigerator for up to 2 days. For a lighter version, swap full-fat cream cheese for a lower-fat alternative and adjust sugar to taste, or serve with a simple citrus glaze.
