  • 1 bag mixed leafy greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, thinly sliced
  • 1 small red onion, thinly sliced
  • 1 tablespoon apple cider vinegar
  • 3 tablespoons extra virgin olive oil
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions
 

  • Combine the mixed greens, cherry tomatoes, cucumber, and red onion in a large bowl.
  • Whisk together the apple cider vinegar, olive oil, Dijon mustard, salt, and pepper in a small bowl until smooth.
