Ingredients
  

  • 2 lbs large potatoes, peeled and cut into 1-inch cubes Approximately 4 potatoes
  • 2 cups chicken broth
  • 8 oz cooked bacon, cut into bite-sized pieces
  • 1/2 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp salt Or to taste
  • 1/4 tsp ground black pepper Or to taste
  • 4 Tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1 cup shredded mild or sharp cheddar cheese
  • 3/4 cup sour cream
  • Green onions for serving

Instructions
 

  • Combine the potatoes, chicken broth, bacon, onion, garlic, salt, and pepper in a crockpot.
  • Cover and cook on high for 3-4 hours or low for 5-6 hours until the potatoes are tender, then lightly mash them.
  • Stir in the butter, flour, milk, cheese, and sour cream, then cook on low for an additional 30 minutes to 1 hour until thick and creamy.
  • Serve topped with green onions and any additional toppings you prefer.

Notes

For optimal melting, grate cheese fresh from a block. Enhance the soup with toppings such as bacon bits, chives, sour cream, extra cheese, or hot sauce. Store leftovers in an airtight container in the refrigerator for up to 3 days.
