Ingredients
  

  • 2 packages dry onion soup mix
  • 1/2 teaspoon paprika
  • 2 pounds beef stew meat or boneless beef roast, cut into 1-inch pieces
  • 5 medium potatoes, peeled and diced
  • 2 to 3 cups baby carrots
  • 1 small yellow onion, chopped
  • 2 cans (10 ounces each) cream of celery soup
  • 1 cup ketchup (can substitute with tomato sauce)

Instructions
 

  • Mix the dry onion soup mix and paprika in a large plastic bag, add the beef, and shake to coat. You may need to do this in batches.
  • Place the coated beef in a greased 7-quart crock pot, then layer the diced potatoes, carrots, and onion on top.
  • Combine the cream of celery soup and ketchup in a bowl, then pour over the meat and vegetables.
  • Cover and cook on low for 7 to 8 hours until the meat is cooked and vegetables are tender, stirring before serving.

Notes

Serve with rolls for a complete meal. Ketchup can be substituted with tomato sauce if preferred.
