Ingredients
  

  • 1/3 cup dark chocolate chips, coarsely chopped
  • 1 cup creamy peanut butter
  • 1/2 cup honey
  • 2 tablespoons Dutch-process cocoa powder
  • 1/8 teaspoon salt
  • 5 tablespoons chocolate protein powder
  • 1-1/2 cups old-fashioned oats
  • 1 teaspoon vanilla extract

Instructions
 

  • Chop the dark chocolate into small pieces and set aside.
  • In a large bowl, mix the chopped chocolate, peanut butter, honey, cocoa powder, salt, protein powder, oats, and vanilla extract using a hand mixer until well combined.
  • Scoop the mixture into balls and place them on a parchment-lined plate, then freeze for 15 minutes before serving.

Notes

Mix the ingredients with a hand mixer as the mixture is thick and sticky. Allow the mixture to sit for a while to let the oats absorb moisture, which will help firm up the energy balls. A cookie scoop can be used for easier portioning instead of rolling by hand.
