Ingredients
  

  • 1 lb boneless, skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • 1 diced onion
  • 2 diced carrots
  • 2 diced celery stalks
  • 3 minced garlic cloves
  • 8 cups chicken broth low-sodium recommended
  • 1 package (about 9 ounces) fresh or frozen cheese tortellini
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions
 

  • Cut the chicken into bite-sized pieces and season with salt and pepper.
  • Heat olive oil in a large soup pot over medium heat, then sauté the onion, carrots, and celery for about 5 minutes until softened, adding garlic for an additional minute.
  • Pour in the chicken broth, add the chicken, bay leaves, and thyme, then bring to a boil and let simmer for 20 minutes.
  • Add the tortellini and cook according to package instructions, usually 5-7 minutes, adjusting seasoning with salt and pepper, and stirring in parsley.
  • Remove bay leaves before serving and ladle soup into bowls to serve hot.

Notes

Use fresh vegetables and herbs for enhanced flavor. Add tortellini towards the end of cooking to avoid overcooking. For a thicker soup, reduce broth or add a cornstarch slurry.
