Ingredients
  

  • 2 cups cooked chicken breast, diced (about 2 large breasts)
  • 6 slices thick-cut bacon
  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • ½ cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon fresh lemon juice (optional)

Instructions
 

  • Cook the bacon in a skillet over medium heat until crispy, then crumble and set aside.
  • If using raw chicken, season and cook in the same skillet until browned, then dice.
  • In a bowl, whisk together mayonnaise, Greek yogurt, Dijon mustard, garlic powder, lemon juice, salt, and pepper.
  • In a large bowl, combine lettuce, tomatoes, chicken, and bacon, then drizzle with dressing and toss.
  • Serve immediately in individual bowls or plates.

Notes

For added flavor, consider including avocado or shredded cheese. When meal prepping, keep the dressing separate until serving to maintain freshness.
