Ingredients
  

  • 4 pieces Roma tomatoes, diced
  • ¼ cup chopped basil leaves
  • 1 clove garlic, minced
  • 1 tablespoon extra virgin olive oil
  • 1–2 teaspoons balsamic vinegar
  • Salt, to taste
  • 8 oz feta cheese, crumbled
  • ½ block (4 oz) cream cheese, softened
  • ½ cup sour cream
  • 1 clove garlic, minced
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon olive oil
  • Salt, to taste
  • Chopped basil leaves, for garnish
  • Red pepper flakes, for garnish
  • Freshly grated Parmesan cheese, for garnish

Instructions
 

  • Core and chop the Roma tomatoes into small cubes, removing seeds if desired.
  • Combine the diced tomatoes, chopped basil, minced garlic, olive oil, balsamic vinegar, and salt in a bowl, mixing gently.
  • Let the bruschetta mixture marinate for about 10 minutes.
  • Blend the feta, cream cheese, sour cream, minced garlic, lemon juice, and olive oil in a food processor until smooth.
  • Spread the cheese mixture in a shallow serving dish.
  • Top with the marinated bruschetta mixture.
  • Garnish with chopped basil, red pepper flakes, and grated Parmesan cheese.

Notes

For a milder taste, consider cheese alternatives like goat cheese or ricotta. You can also use different tomato varieties for varied flavors and add herbs like oregano or thyme for customization.
