Ingredients
  

  • 4 cups broccoli florets, chopped
  • 1 cup purple cabbage, shredded
  • 1 cup carrots, shredded
  • 1 cup edamame, shelled
  • 1/2 cup green onions, sliced
  • 2 tbsp sesame seeds, toasted
  • 1/4 cup bell pepper, thinly sliced
  • 3 tbsp soy sauce for the dressing
  • 2 tbsp rice vinegar for the dressing
  • 1 tbsp sesame oil for the dressing
  • 1 tbsp honey or maple syrup for the dressing
  • 1 tsp garlic, minced for the dressing
  • 1 tsp ginger, grated for the dressing

Instructions
 

  • Chop the broccoli florets into bite-sized pieces and shred the purple cabbage and carrots.
  • Add shelled edamame, sliced green onions, and thinly sliced bell pepper to the bowl.
  • Toast sesame seeds in a dry skillet over medium heat until golden.
  • In a small bowl, whisk together the dressing ingredients: soy sauce, rice vinegar, sesame oil, honey or maple syrup, minced garlic, and grated ginger.
  • Combine all chopped vegetables and edamame in a large bowl, drizzle with the dressing, and toss to coat.
  • Sprinkle toasted sesame seeds on top and give it a final gentle toss.

Notes

Variations include substituting edamame with chickpeas, adding avocado, mixing in nuts, using a different dressing, incorporating fresh herbs, bulking with quinoa, experimenting with spices, topping with cheese, or including seasonal fruits.
