Ingredients
  

  • Mixed greens
  • 2 medium Ripe peaches Use firm, ripe peaches for optimal texture.
  • 1 cup Fresh blueberries Can use frozen blueberries if fresh are unavailable.
  • 4 oz Feta cheese Preferably block to crumble.
  • 1/4 medium Red onion Optional.
  • 1/2 cup Toasted chopped pecans Optional; lightly toast for enhanced flavor.
  • 3 tbsp Olive oil
  • 2 tbsp Lime juice
  • 1 tbsp Honey
  • 1 tsp Dijon mustard
  • to taste Salt
  • to taste Black pepper

Instructions
 

  • Whisk together olive oil, lime juice, honey, Dijon mustard, salt, and black pepper in a small bowl until blended.
  • Rinse and dry the mixed greens, then place them in a large serving bowl.
  • Slice the peaches into wedges and add them to the greens.
  • Add fresh blueberries, crumbled feta, and red onion if using to the bowl.
  • Sprinkle toasted pecans over the salad if desired.
  • Drizzle the honey-lime vinaigrette over the salad just before serving.
  • Toss gently to coat all ingredients with the dressing and serve immediately.

Notes

Chill feta cheese before crumbling for easier handling. Dress the salad right before serving to maintain crispness. Store leftover vinaigrette separately and dress individual servings to keep greens fresh.
