Ingredients
  

Cake

  • 1 box yellow cake mix
  • 3 large eggs
  • 1 cup water

Gelatin mixture

  • 1 package gelatin (any flavor)
  • 1 cup boiling water
  • 1 cup cold water

Toppings

  • 1 cup whipped topping
  • 1 cup shredded coconut (optional)
  • Easter-themed sprinkles for decoration

Preparation

  • Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch baking dish.
  • In a large bowl, mix the cake mix, 3 large eggs, and 1 cup water until smooth; pour into the prepared baking dish.
  • Bake as directed on the box until a toothpick comes out clean, then allow the cake to cool for 10 minutes.
  • Using the end of a wooden spoon, poke holes all over the warm cake so the gelatin will seep in.
  • In a separate bowl, dissolve the gelatin in 1 cup boiling water, add 1 cup cold water and stir; pour the gelatin mixture evenly over the warm cake so it fills the holes.
  • Let the cake cool completely, spread 1 cup whipped topping over it, sprinkle with 1 cup shredded coconut and Easter-themed sprinkles, and chill at least 2 hours before serving.

Notes

Serve chilled with extra whipped topping on the side. This cake tastes better when prepared ahead and chilled. Variations include using different gelatin flavors or toppings.
