Preparation

  • Beat the softened cream cheese, 1/2 cup sugar, and vanilla until smooth and fluffy.
  • Prepare the Jello by dissolving both 3 oz packets in 1 cup boiling water; stir until fully dissolved, then add 1/2 cup cold water.
  • Chill the Jello in the fridge until it starts to thicken but is still pourable, about 15–20 minutes.
  • Fold the whipped topping into the cream cheese mixture until evenly combined and smooth.
  • Spread the cream cheese mixture evenly into the graham cracker crust.
  • Pour the slightly thickened Jello over the cream layer, refrigerate at least 4 hours or until fully set, then garnish with optional decorations before serving.

Notes

Soften the cream cheese at room temperature for at least 30 minutes to avoid lumps. Allow the Jello to thicken slightly before pouring so it doesn't fully dissolve the cream layer. Chill the pie at least 4 hours, overnight is best for clean slices. Store covered in the fridge for up to 3 days to keep texture fresh; avoid freezing.
