Ingredients
  

  • 1/2 head cabbage, thinly sliced
  • 1 small yellow onion, thinly sliced
  • 1/4 cup oil
  • Salt and freshly ground black pepper, to taste
  • 1 pound kielbasa sausage, sliced 1/2-inch thick
  • 1 (24 count) package frozen pierogies, any flavor
  • 1/2 teaspoon paprika
  • 1/2 teaspoon Cajun seasoning
  • 2 tablespoons red wine vinegar
  • 2 tablespoons whole grain mustard
  • 1 tablespoon honey
  • Fresh parsley, for garnish
  • Fresh dill, for garnish
  • Sour cream, for serving

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Combine cabbage, onion, and oil in a large bowl, seasoning with salt and pepper.
  • Spread the cabbage mixture on a baking sheet, then layer with sausage and pierogies, sprinkling with paprika and Cajun seasoning.
  • Bake for 20 minutes, stir, then bake for an additional 20 to 30 minutes until sausage is browned.
  • Whisk together red wine vinegar, mustard, and honey, then drizzle over the baked ingredients before serving.
  • Garnish with parsley and dill, and serve with sour cream.

Notes

For a variation, different flavors of pierogies can be used. Ensure to toss the ingredients halfway through baking for even cooking. The dish can be served with additional toppings or sides as desired.
