Ingredients

  • 2 medium Cucumbers
  • 1 medium Red onion
  • 2 medium Tomatoes Use firm, ripe tomatoes to avoid watery results.

Cheese

  • 1 cup Feta cheese Can swap with goat cheese or omit for dairy-free.

Dressing

  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice

Spices

  • 1 teaspoon Salt Salt cucumbers briefly and drain to remove excess water for a crisper salad.
  • 1/2 teaspoon Pepper

Fresh herbs

  • 1 tablespoon Dill or parsley Mix in chopped dill and mint for a brighter herbal note.

Preparation

  • Cut the cucumbers, red onion, and tomatoes into bite-sized pieces.
  • In a large bowl, combine the cucumbers, red onion, tomatoes, and feta cheese.
  • In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  • Pour the dressing over the salad and toss gently to combine.
  • Garnish with fresh herbs and adjust seasoning to taste.
  • Serve chilled.

Notes

Chill the salad at least 15 minutes before serving to let flavors meld. Store leftovers in an airtight container up to 2 days for best texture.
