Ingredients
  

Veggies

  • 3 tomatoes, diced Use ripe but firm tomatoes.
  • 3 cucumbers, peeled and sliced Peel if the skins are thick, or leave them on for extra crunch.
  • 1 onion, thinly sliced

Dressing

  • ½ cup vinegar (white or apple cider)
  • 2 tablespoons sugar
  • ¼ cup olive oil
  • 1 cup water

Seasoning

  • 2 teaspoons salt
  • 1 teaspoon cracked pepper

Preparation

  • In a large bowl, combine the diced tomatoes, sliced cucumbers, and onion.
  • In another bowl or jar, whisk together vinegar, sugar, salt, pepper, water, and olive oil until fully combined.
  • Pour the dressing over the vegetables and toss gently to coat.
  • Chill in the refrigerator for at least 15–20 minutes to enhance flavor.
  • Serve chilled or at room temperature.

Notes

Store in an airtight container for up to 3 days, stirring before serving. Taste and adjust salt before serving—salt brings out the tomato sweetness.
