Cheese

Dressing

  • 3 tablespoons fresh lemon juice Make the dressing just before serving to keep flavors bright.
  • 3 tablespoons extra-virgin olive oil Use high-quality olive oil for best flavor.

Spices

  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon freshly ground black pepper

Preparation

  • Cut cucumbers into bite-sized pieces and place them in a large mixing bowl.
  • Crumble feta cheese over the cucumbers evenly.
  • In a separate small bowl, whisk together lemon juice, olive oil, salt, pepper, and dried oregano until combined.
  • Pour the dressing over the cucumber and feta mixture and gently toss to coat everything without breaking up the feta too much.
  • Serve immediately or refrigerate for up to an hour for flavors to meld before serving.

Notes

Serve alongside grilled lamb or fish, over mixed greens, or with toasted pita chips. Adjust dressing just before serving to avoid soggy cucumbers.
