With smoky sausage, tender potatoes, and a tomato-based broth, it’s comfort food you’ll want on repeat.

Ingredients
  

  • 1 lb smoked sausage sliced into rounds
  • 4 medium potatoes diced (baby potatoes work too)
  • 1 onion chopped
  • 1 bell pepper chopped
  • 1 14.5 oz can diced tomatoes, with juices
  • 2 cups chicken broth
  • 1 tsp paprika
  • Salt and black pepper to taste

Instructions
 

  • Dice the potatoes into bite-sized chunks. Chop the onion and bell pepper, then slice the sausage into thick rounds.
  • Add sausage, potatoes, veggies, diced tomatoes with their juices, broth, and paprika to your crockpot. Stir gently to combine.
  • Cover and cook on low for 5–6 hours until the potatoes are tender and the flavors blend into a rich broth.
  • Stir before serving. Taste and adjust seasoning with salt and pepper if needed. Serve hot with crusty bread or a fresh salad.

Notes

Spice it up with hot smoked sausage or a pinch of cayenne. Add extra veggies like spinach, kale, or carrots. Swap in turkey sausage, chorizo, or even chicken thighs. For a vegan twist, use plant-based sausage and vegetable broth. If you prefer a thicker casserole, mash a few potatoes into the broth before serving.
