Ingredients
  

  • 2 lbs boneless, skinless chicken breasts
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup salsa (red or green)
  • Juice of 2 limes lime juice (optional)
  • 1/2 cup chicken broth (low or no salt) or water

Instructions
 

  • Place the chicken breasts in the crockpot and sprinkle the spices over them, then add salsa and lime juice if using.
  • Pour chicken broth into the crockpot, cover, and cook on low for 4-6 hours or high for 3-4 hours.
  • Shred the cooked chicken using two forks or a stand mixer, then return it to the crockpot to absorb the juices.

Notes

For best results, cook the chicken on low to ensure tenderness. Ensure the chicken is mostly submerged in the salsa and broth for optimal cooking. Always return shredded chicken to the pot for flavor absorption.
