Crock Pot French Onion Chicken (Cheesy, Cozy, and Full of Flavor)

Slow cooked chicken breasts smothered in rich onion gravy, melted provolone cheese, and topped with crispy fried onions.

Ingredients
  

  • 1 onion sliced
  • 4 boneless skinless chicken breasts
  • 1 can 10.5 oz cream of chicken soup
  • 1 packet onion soup mix
  • 2 cups beef broth
  • 6 –8 slices provolone cheese
  • 1/2 tsp dried thyme
  • 1 cup crispy fried onions
  • Cooking spray

Instructions
 

  • 1. Spray the inside of your Crock Pot with cooking spray.
  • 2. Slice the onion and spread it evenly in the bottom of the pot.
  • 3. Place the chicken breasts on top of the onions.
  • 4. Add the cream of chicken soup, onion soup mix, and beef broth to a bowl.
  • 5. Whisk until the mixture is smooth.
  • 6. Pour it over the chicken and onions.
  • 7. Cover and cook on LOW for 5 hours.
  • 8. After 5 hours, lay slices of provolone cheese on top of the chicken.
  • 9. Cover again and let the cheese melt for about 10 minutes.
  • 10. Uncover and sprinkle dried thyme and crispy fried onions over the top.
  • 11. Leave it uncovered and cook on LOW for another 10 minutes.
  • 12. Serve hot with egg noodles, mashed potatoes, or rice.

Notes

Don't skip the crispy onions — they add the perfect crunch.
Use mozzarella or gruyere instead of provolone if preferred.
Great with a side of green beans or roasted carrots.
