Ingredients
  

  • Carrots (baby or large cut)
  • Potatoes (russet, red, or gold)
  • Onion
  • Garlic cloves
  • Corned beef brisket
  • Beef broth
  • Salt and pepper
  • Cabbage (optional)

Instructions
 

  • Layer the carrots, potatoes, and onion in the bottom of the crock pot, then add minced garlic on top.
  • Pour beef broth over the vegetables and place the rinsed corned beef brisket on top.
  • Sprinkle the included spices, salt, and pepper over the brisket, then cook on low for 8 hours.
  • Add cabbage one hour before serving or cook it separately to avoid flavor mingling.
  • Once the brisket reaches 190°F, remove it from the crock pot, let it rest for 5 minutes, then slice and serve.

Notes

Rinse the corned beef before cooking to eliminate excess blood and trim any unwanted fat. Adjust cooking time if your crock pot tends to cook hotter than average, and use a meat thermometer to confirm the brisket is fully cooked.
