Breading

  • 1 cup almond flour
  • 1/2 cup grated Parmesan cheese

Eggs

  • 2 large eggs

Preparation

  • Preheat your air fryer to 400°F (200°C).
  • Cut the zucchinis into thin fry shapes. Pat dry with paper towels to remove excess moisture.
  • In one bowl, mix almond flour, Parmesan cheese, garlic powder, salt, and pepper.
  • In another bowl, beat the eggs until smooth.

Coating

  • Dip each zucchini fry into the egg, then coat it with the almond flour mixture, pressing gently to adhere.

Cooking

  • Place the coated zucchini fries in the air fryer basket in a single layer and spray lightly with olive oil.
  • Cook for 8–10 minutes or until golden and crispy, shaking the basket halfway through for even browning.
  • Serve with your favorite dipping sauce; pair alongside air fryer crispy potatoes for a fuller plate.

Notes

Pat zucchinis very dry to help the coating stick and stay crispy. Don’t overcrowd the air fryer basket; give each fry space to crisp. If fries aren’t golden enough, add 1–2 more minutes and check frequently. Store leftovers in an airtight container and re-crisp in the air fryer for best texture. Use freshly grated Parmesan for better melting and flavor.
