Preparation

  • Preheat the air fryer to 400°F for 3 minutes so it’s hot and ready.
  • Slice zucchini into 1/4- to 1/2-inch rounds and pat dry to remove excess moisture.
  • Toss zucchini with olive oil in a bowl until evenly coated.
  • Mix Parmesan, smoked paprika, garlic salt, and black pepper, then sprinkle over zucchini and toss gently to coat.

Cooking

  • Arrange zucchini in a single layer in the air fryer basket without overcrowding.
  • Air fry at 400°F for 8–10 minutes, shaking or flipping halfway, until edges are golden and crisp.
  • Remove and serve immediately for best crunch.

Notes

Slice zucchini evenly so pieces cook at the same rate. Pat slices dry to help the coating stick and crisp better. Don’t overcrowd the basket; cook in batches if needed for maximum crunch. Reheat in the air fryer at 350°F for a few minutes to restore crispness.
