  • 2 medium zucchini

Breading

  • 1 cup breadcrumbs (panko or regular) Panko gives extra crunch.
  • 1/2 cup grated Parmesan cheese For a cheesy flavor.

Seasoning

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper

Binder

  • 1 egg

Cooking

  • as needed Cooking spray To prevent sticking.

Preparation

  • Preheat the air fryer to 400°F (200°C).
  • Cut the zucchini into fry-shaped pieces, about 3 inches long and 1/2 inch thick.
  • In a bowl, mix breadcrumbs, Parmesan, garlic powder, onion powder, salt, and pepper.
  • Beat the egg in a separate bowl, dip each zucchini fry into the egg, then press into the breadcrumb mixture to coat.

Cooking

  • Spray the air fryer basket with cooking spray and arrange fries in a single layer without overcrowding.
  • Lightly spray the tops of the fries with cooking spray and air fry for 10–12 minutes, flipping halfway, until golden and crispy.

Serving

  • Serve warm with your favorite dipping sauce.

Notes

Pat zucchini dry with paper towels to reduce sogginess before breading. Don’t overcrowd the basket; cook in batches for even crisping. Store leftovers in an airtight container in the fridge for 3–4 days and re-crisp in the air fryer.
