Ingredients
  

Veggies

  • 2 medium zucchinis, trimmed and cut into sticks

Coating

  • 1 cup breadcrumbs (or almond flour for a gluten-free option)
  • 1/2 cup grated parmesan cheese Can be adjusted to taste

Binders

  • 2 pcs eggs, beaten

Spices

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper

Instructions
 

Preparation

  • Preheat the air fryer to 400°F (200°C). Lightly spray the basket so fries don’t stick.
  • Cut the zucchinis into fries or sticks about 3 inches long and 1/2 inch thick. Pat dry with a towel.
  • Whisk the 2 eggs in one bowl; in another bowl combine breadcrumbs, parmesan, garlic powder, onion powder, salt, and pepper.

Coating and Cooking

  • Dip each zucchini stick into the egg, then press into the breadcrumb mixture to coat evenly.
  • Arrange coated zucchini in a single layer in the air fryer basket, spray lightly with cooking spray, and cook 10–12 minutes, flipping halfway until golden and crispy.

Notes

For extra crisping tips, consider double-coating the zucchini or using a little extra cooking spray. Store leftovers in the fridge for up to 3 days and reheat in the air fryer for best texture.
