Preparation

  • In a large bowl, combine the sliced cucumbers and onions.
  • In a separate bowl, whisk together the Greek yogurt, olive oil, lemon juice, minced garlic, salt, and pepper until smooth.
  • Pour the yogurt dressing over the cucumbers and onions and toss gently to coat.
  • Let the salad sit at room temperature for about 10 minutes to allow the flavors to meld.
  • Garnish with fresh dill or mint, if desired, and serve chilled.

Notes

Slice cucumbers thin for the best texture and easy eating. Salt lightly and let sit briefly if cucumbers are very watery; then drain excess liquid. Make it 10–15 minutes ahead so flavors meld, but serve within a few hours for crunch. Store leftovers in an airtight container in the fridge for up to 2–3 days.
