- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 medium yellow onion finely diced
- 4 garlic cloves minced
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon nutmeg optional
- 2 cups cooked rotisserie chicken shredded
- 6 lasagna noodles broken into bite-sized pieces
- 1 ½ cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- Fresh chopped parsley for garnish
- Extra Parmesan for serving
1. Heat olive oil and butter in a large pot over medium heat.
2. Add the diced onion and sauté for 5 minutes until translucent.
3. Stir in garlic and cook for 1 minute until fragrant.
4. Pour in chicken broth, then stir in chicken, salt, pepper, and nutmeg.
5. Bring to a simmer and add broken lasagna noodles. Cook 10–12 minutes.
6. Reduce heat and stir in heavy cream, mozzarella, and Parmesan until melted.
7. Simmer for 3–4 more minutes until creamy and smooth.
8. Ladle into bowls, top with parsley and extra cheese. Serve hot.
Don’t overcook the noodles—they’ll keep softening in the broth.
Add more cheese if you want it thicker, or loosen with extra broth.
For extra flavor, stir in a splash of white wine before adding the broth.
