Ingredients
  

  • ¾ cup Arborio rice
  • 4 cups whole milk
  • ½ cup granulated sugar
  • ¼ tsp salt
  • 1 tbsp unsalted butter
  • tsp vanilla extract
  • Ground cinnamon optional

Instructions
 

  • Rinse the rice under cold water until mostly clear to remove excess starch.
  • In a heavy-bottom saucepan, warm the milk with sugar and salt over medium heat, stirring gently.
  • Add the rinsed rice and reduce the heat to low. Let it simmer while stirring often.
  • Continue cooking for 30–35 minutes, until the rice is soft and the mixture thickens into pudding.
  • Remove from heat and stir in vanilla and butter for extra creaminess.
  • Serve warm or chilled, topped with a pinch of cinnamon if desired.

Notes

Use Arborio rice for the dreamiest texture. Stir often and simmer low and slow. Add a splash of cream or sweetened condensed milk at the end for extra richness.
