Ingredients
  

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cups fresh baby spinach, chopped
  • 1 1/2 cups cottage cheese
  • 4 large eggs
  • 1 cup shredded cheddar cheese (or half cheddar, half mozzarella)
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, finely chopped (for garnish)

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Sauté the onion and bell pepper in olive oil until softened, then add spinach until wilted, seasoning with garlic powder, salt, and pepper.
  • In a bowl, whisk together eggs, milk, and cottage cheese, then mix in Italian seasoning and additional salt and pepper.
  • Fold in the sautéed vegetables and shredded cheese until combined.
  • Pour the mixture into a greased 9-inch pie dish and bake for 40–45 minutes until golden brown.
  • Let cool for 5–10 minutes before slicing and serving warm or at room temperature.

Notes

Use fresh ingredients for optimal flavor and avoid overcooking the vegetables to retain their color and nutrients. Let the quiche cool slightly before slicing to maintain its shape.
