Ingredients
  

  • 1 cup natural creamy almond butter
  • cup pure maple syrup
  • ½ cup vanilla protein powder
  • 2 teaspoons vanilla extract
  • ½ cup rolled oats
  • 1 teaspoon salt
  • 1 ½ teaspoons cinnamon
  • ½ cup white chocolate chips
  • 1 teaspoon coconut oil

Instructions
 

  • Mix almond butter, maple syrup, protein powder, vanilla extract, oats, salt, and cinnamon in a bowl until thick batter forms.
  • Scoop the batter onto a lined baking sheet using a mini cookie scoop and shape into balls.
  • Melt white chocolate chips and coconut oil in a microwave, stirring until smooth.
  • Drizzle the melted chocolate over the energy bites and refrigerate for 1 hour until firm.
  • Store the energy bites in an airtight container in the refrigerator or freezer.

Notes

Use natural creamy almond butter that contains only almonds, oil, and salt. Adjust salt based on whether the almond butter is salted or unsalted. Store in an airtight container for 5-7 days in the refrigerator or 2-3 months in the freezer.
