Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1/2 cup sugar
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 tablespoon red food coloring
  • 1/2 cup mini chocolate chips

Instructions
 

  • 1. Preheat oven to 350°F and grease mini loaf pans.
  • 2. In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  • 3. In another bowl, combine buttermilk, sugar, oil, egg, vanilla, vinegar, and red food coloring.
  • 4. Gradually mix wet ingredients into dry until just combined.
  • 5. Fold in chocolate chips.
  • 6. Divide batter into mini loaf pans.
  • 7. Bake for 20–22 minutes or until a toothpick comes out clean.
  • 8. Let cool completely before glazing.

Notes

These loaves freeze well unglazed for up to 4 months.
Glaze only after thawing for best texture.
Store wrapped at room temp for 3 days, or refrigerated if glazed.
