Ingredients
  

Protein

  • 2 pieces chicken breasts

Rice / Grains

  • 2 cups cooked rice

Veggies

  • 1 piece avocado, sliced Keep until just before serving to avoid browning.

Sauce

  • 2 tablespoons honey
  • 1 piece lime, juiced

Spices

  • to taste salt
  • to taste pepper

Toppings

  • 1 bunch fresh cilantro for garnish

Instructions
 

Preparation

  • In a bowl, whisk together the honey and lime juice. Add the chicken breasts and turn to coat; marinate at least 30 minutes.
  • While the chicken marinates, prepare or reheat the 2 cups of cooked rice according to package instructions.

Cooking

  • Heat a grill pan or skillet over medium-high heat and cook the marinated chicken about 6–7 minutes per side, until cooked through.
  • Transfer the chicken to a cutting board and slice into strips once rested for a few minutes.

Assembly

  • To assemble, mound the cooked rice on each plate, top with slices of honey-lime chicken, then arrange avocado slices on top.
  • Season with salt and pepper, garnish with fresh cilantro, and serve immediately.

Notes

Marinate at least 30 minutes for best flavor; longer (up to 2 hours) gives deeper flavor. Store chicken and rice separately from avocado for up to 3 days in airtight containers.
