Ingredients
  

  • 1.5 pounds baby potatoes, halved or quartered
  • 12 oz smoked sausage, sliced into rounds
  • 2 tablespoons olive oil
  • 1 packet ranch seasoning mix
  • 1 teaspoon garlic powder
  • 1.5 cups shredded cheddar cheese
  • to taste salt and black pepper
  • 2 tablespoons chopped parsley, optional for garnish

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  • Scrub and chop the potatoes into bite-sized pieces so they cook evenly. Slice the sausage into thick rounds.
  • In a large bowl, toss the potatoes and sausage with olive oil, ranch seasoning, garlic powder, salt, and pepper until well coated.
  • Spread the mixture on the baking sheet in a single layer. Bake for 35–40 minutes, flipping halfway through, until golden and crispy.
  • Remove from the oven and sprinkle with shredded cheddar cheese. Return to oven for 5–7 minutes until melted and bubbly.
  • Garnish with parsley and serve warm.

Notes

Cut the potatoes evenly so they roast at the same pace. Don’t crowd the pan or things will steam instead of crisp. For extra kick, add cayenne pepper or drizzle barbecue sauce before baking.
