Ingredients
  

  • 1 tablespoon vegetable oil
  • 1 ring andouille sausage, sliced (13.5 ounces)
  • 1 large onion, diced (about 1 cup)
  • ½ cup diced celery (about 1 rib)
  • ½ cup red bell pepper, diced (seeded)
  • 2 teaspoons minced garlic
  • 1 teaspoon Cajun seasoning
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • 4 cups chicken broth
  • 4 large russet potatoes, peeled and cubed
  • ½ cup heavy whipping cream
  • 1 cup shredded mild cheddar cheese
  • chopped parsley for garnish

Instructions
 

  • Heat oil in a large pot over medium heat, add sausage, and cook until browned, then set aside.
  • In the same pot, sauté onion, celery, and bell pepper until softened, then add garlic and cook for an additional minute.
  • Stir in Cajun seasoning, salt, pepper, paprika, cayenne, chicken broth, and potatoes, then simmer until potatoes are tender.
  • Return sausage to the pot, add cream and cheese, and simmer until heated through and cheese is melted.
  • Garnish with parsley and serve warm.

Notes

For a milder soup, reduce the amount of Cajun seasoning, cayenne pepper, and andouille sausage. Store in an airtight container in the refrigerator for up to 3-4 days. For longer storage, freeze in freezer-safe containers for up to 2-3 months.
