- 2 tsp vegetable oil
- 1 lb lean ground beef
- Salt and pepper to taste
- 1 medium yellow onion diced
- 2 garlic cloves minced
- 4 cups chopped green cabbage
- 2 medium carrots sliced
- 4 cups low-sodium beef broth
- 3 8 oz cans tomato sauce
- ½ cup white rice uncooked
- 1 bay leaf
- 3 tbsp light brown sugar
- 2 tbsp fresh chopped parsley
1. Heat oil in a large soup pot or Dutch oven over medium-high.
2. Add the ground beef, season with salt and pepper, and cook until browned.
3. Add diced onion and garlic. Cook for 2 to 3 minutes until onions are tender.
4. Stir in cabbage, carrots, tomato sauce, beef broth, rice, bay leaf, and brown sugar.
5. Bring to a gentle simmer. Cook for 25 to 30 minutes until rice is tender.
6. Remove bay leaf. Stir in parsley and serve.
Soup can be frozen in portions up to 3 months.
Use a Dutch oven for deeper flavor.
Brown the beef well to enhance taste.
