Ingredients
  

  • 1 ½ cups all-purpose flour
  • 2 ½ teaspoons aluminum-free baking powder
  • ½ teaspoon salt
  • 1 tablespoon sugar
  • 1 ¼ cups milk (any kind)
  • 1 large egg
  • 3 tablespoons melted butter
  • 2 teaspoons vanilla extract (optional)

Instructions
 

  • Combine flour, baking powder, salt, and sugar in a bowl, then add milk, egg, melted butter, and vanilla extract, whisking until just combined.
  • Preheat a non-stick griddle or pan over medium-high heat and grease the surface.
  • Pour ¼ cup of batter onto the hot surface, cook until bubbles form, then flip and cook for another minute.
  • Serve the pancakes warm with your choice of toppings.

Notes

For variations, add up to 1 cup of fruit or ½ cup of chocolate chips to the batter. The batter can be made ahead and refrigerated overnight, and cooked pancakes can be frozen for up to 3 months.
