Ingredients
  

  • 4 pounds corned beef brisket (flat or point cut, with spice packet optional)
  • 2 tablespoons oil (for searing)
  • 1.5 cups beef broth
  • 3 tablespoons whole grain mustard
  • 6 cloves garlic (smashed and whole)
  • 1 large onion (sliced into wedges)
  • 15-20 whole peppercorns (or fresh cracked pepper to taste)
  • 8-10 sprigs fresh thyme (or 1 teaspoon dried thyme)
  • 2 bay leaves
  • 2 pounds carrots (peeled and quartered)
  • 0.5 cup butter (1 stick)
  • 1 large head green cabbage (sliced into wedges)
  • 1 teaspoon kosher salt
  • 2 pounds red potatoes (for roasting)
  • horseradish sauce (for serving)
  • parsley and/or chives (for garnish)

Instructions
 

  • Heat a large skillet over medium-high heat for 2 minutes and drain the brine from the corned beef without rinsing.
  • Sear the corned beef in the skillet for 2-4 minutes on one side until golden brown, then flip and sear the other side for 2-3 minutes.
  • Place the seared beef in a crock pot, fat side up, and mix beef broth with mustard before pouring it over the beef.
  • Add garlic, onion, peppercorns, thyme, bay leaves, and the spice packet if applicable, then cover and cook on low for 6-7 hours.
  • Slice carrots into thirds and add them to the crock pot, covering and cooking for an additional 1-2 hours.
  • Sauté cabbage in melted butter with salt for about 10 minutes until slightly wilted, then add to the crock pot and cook for another 30-60 minutes.
  • Roast red potatoes in the oven separately.
  • Arrange the corned beef and vegetables on a platter, garnish with parsley or chives, and serve with horseradish sauce.

Notes

For best results, do not add carrots at the beginning; they should be added after the beef has cooked for 6-7 hours to avoid overcooking. Cabbage should be added towards the end of cooking to maintain texture. Roasting potatoes is recommended instead of cooking them in the crock pot to avoid mushiness.
